So I'm getting holes and wondering, I know I've upped my fertilizers but I'm thinking, if I'm getting holes is that mostly a potassium deficiency? If yes, would it be a good idea to increase that a bit and replant my plants and watch the new leaves. I know the old leaves are not fixable but I'm guessing I just have to watch and see if it gets worse. My plants are looking better but still getting some weak leaves on these.

It could also be a CO2 deficiency. Are you adding KH2PO4?
FWIW, I add about 1ppm of K+ to my tank in addition to EI dosing.
If you're dosing KNO3 and KH2PO4 you shouldn't need much K+.
Did you ever find out what you are using to soften your water?
What do you mean by weak leaves?

To review the doses for your 75 gallon tank;
  • KNO3, 1/2 teaspoon (5.6 ppm, NO3) 3 or 4 times/week
    EI doses are often 7.5 ppm 2-4 times/week
  • KH2PO4, 1/16 teaspoon (0.9 ppm, PO4) 3 or 4 times/week
    EI doses are often 1.3 ppm, 2-4 times/week
  • Plantex CSM+B, 1/4 teaspoon (0.25 ppm, Fe) 3 or 4 times/week
    when adding trace nutrients, Fe is a proxy for all trace nutrient levels
    EI doses are often 0.5 ppm, 2-4 times/week
  • Fe Gluconate, 3/16 teaspoon (0.2- ppm Fe) daily.
    Should be plenty.

Under-dosing maybe?

I do Potassium Sulfate 3/4 of a teaspoon 3X a week. I add 1 tsp of phosphate once a week.

Would that be enough or am I seriously underdosing on both? I've got powdered versions of both so can add it dry. Right now the amount I'm dosing is dry.

I also added 1 tsp of calcium and 3 tsp of magnesium (epson salts) when I do water changes due to the water system.
