I have recently used a Diatom filter on my planted aquarium and was wondering if it also removes all the nutrients from the water?

No, it doesn't. Diatom filters are just mechanical filters that remove very fine particulates. The nutrients in the water are not particles, but ions, which cannot be mechanically filtered out.
